TASTING NOTES
Earthy notes lead you into the ripeness of plum, black berry and black currant. Well-rounded with soft velvety tannins characteristic of this variety with a fruit finish that is lasting and enduring. Enjoy with slow roasted prime rib, lamb, ratatouille or stuffed peppers.
VINTAGE & VITICULTURE
A slow start to the season with a cool spring but summer brought hot dry weather perfect for grape growing. Mother Nature however turned the tables on winemakers in Ontario with a wet humid fall. Harvest was quick in an effort to pick fruit before rains affected the quality of grapes.
WINEMAKER’S NOTES
The juice underwent fermentation on its skins for 16 days, using selected yeast. Oak barrel fermentation and aging in French barriques for 18 months this added an array of soft tannins and complexity to this rich red wine. This wine also underwent complete malolactic fermentation.
